If you know me you know I love a lot of things (my dog, endless beach days, raw oysters) and among those things is adding extra protein to all the things! In this recipe I've added high protein Greek yogurt to my fave coleslaw to make it a salad that's high in fibre and gives ya a little extra protein. This one is so yummy!!!
This salad is crunchy, creamy and zesty and little sweet. It's so easy to make. And it's a great choice to eat during the winter months when fresh greens look droopy and come from so, so far away. I hope you like it as much as I do!
Creamy Protein Coleslaw
Ingredients:
14 oz bag coleslaw mix
1/4 cup dried cranberries
1/2 cup toasted raw sunflower seeds (I toast mine on a tray in my toaster oven for about 5 minutes. Watch closely so they don't burn).
1 cup high protein plain Greek or Icelandic yogurt (look for one with 19g of protein per serving)
1 heaping tbsp mayonnaise
1 tbsp Dijon mustard
1 tbsp honey
juice of 1/2 a lemon (or a full lemon if you want it really tangy)
1/4 tsp sea salt or to taste
1/2 tsp ground black pepper
In a large salad bowl, whisk together the dressing ingredients until smooth (the yogurt, mayo, Dijon, lemon juice, honey, salt and pepper). Then add the coleslaw mix, the cranberries and sunflower seeds and mix until everything is coated in the dressing. This salad holds up really well if you make it ahead and refrigerate it.
