High Fibre Protein Chocolate Chip Berry Muffins

These muffins make a great high fibre, high protein snack. I actually eat these as dessert rather than as a snack. But you do you. The sneaky hidden ingredient here is cottage cheese. I spent most of my life ignoring cottage cheese. Cottage cheese is that geeky guy in a teen rom-com, who you ignore for most of the movie, but realize near the end is actually hot and way cooler than all the other guys. That's cottage cheese for me. I put it in anything I can now, because it's such a great source of protein.

I use barley flour here. It's my fave whole grain flour because it's got a mild taste. You can use any whole grain flour you prefer. Be warned that if you use white flour these will still be yummy but they won't be high fibre.

Berry protein muffins

1 1/2 cups barley flour

1 scoop vanilla protein powder (I used Legion brand whey protein isolate)

1 tsp baking powder

1/4 tsp salt

1/2 cup blended cottage cheese

1/2 cup pure maple syrup

1/4 cup coconut sugar

2 large eggs

1/2 cup unsweetened soy milk or dairy milk

2 tbsp vegetable oil

1 tsp vanilla extract

Add ins - frozen berries & dark chocolate chips

Directions:

Blend one cup of cottage cheese in a high speed blender and measure out 1/2 cup for this recipe.

Preheat the oven to 350℉ and line a muffin tin with liners.

In a large mixing bowl, whisk together all the wet ingredients. Add in the flour, protein powder, baking powder, and salt and mix gently to stir everything together. If the batter is too thick, add a little more milk.

Divide the batter between the 12 muffin cups. Add a small handful of dark chocolate chips and frozen berries to each one.

Bake at 350 for 18-25 minutes depending on your oven. Check them at the 18 minute mark. They are done when a toothpick inserted in the middle comes out clean.

Store in an airtight container in the fridge (I like to warm them in the microwave before eating, but my husband and kids like them cold!).
