I'm on an eternal quest to eat more protein myself, but also to get my very sporty sons to eat more protein, especially in their snacks.
So I sneak protein powder into anything socially acceptable to sneak it into. If there is a baked good in my house, you know I'm throwing some protein powder in. Hence, these banana protein muffins. They've got chocolate chips to entice the kiddos, and they can be gluten free if you use gluten free oat flour.
Ingredients:
3 ripe bananas, mashed very well
2 eggs, room temp
1/4 cup honey (you can sub maple syrup I suspect)
1 tsp pure vanilla extract
1/2 cup whey protein powder (I used birthday cake flavour; vanilla would also be delish)
1/2 cup almond flour
1/2 cup oat flour
2 tsp baking powder
1/4 tsp salt
1/2 cup dark chocolate chips
Directions:
Preheat over to 350F.
In a large mixing bowl, mash the bananas. Mash them like you're mad at them so they get very smooth and not lumpy.
Next add the eggs, honey, and vanilla, and whisk until smooth.
Switch to a mixing spoon, and all the dry ingredients, except the chocolate chips. Mix just to combine, but don't overmix.
Fold in the chocolate chips with a spatula.
Spoon the mixture into a lined 12 muffin tin, and bake for 20ish minutes, until a toothpick comes out clean.
Remove from oven, let cool, and store in an airtight container.
After day one, I store these in the fridge.
