Chocolate, check. Peanut butter, check. Coconut, check. The gang`s all here. I like all these things separately, but I like they so much more when they are all together. One big chocolate-y peanut buttery, coconut-y family. These bites are delish, and are full of protein, with no added sugars to boot. The dates provide the sweetness, while the almonds and cacao nibs add just the right amount of crunch. It brings me great comfort to know that at any given time, I have these bad boys hanging out in the fridge, waiting for me to grab when I`m in a rush.
The best part of all this goodness is that these little bites are easy-peasy to make. In a food processor, just combine:
3/4 cup dates
1/2 cup raw almonds
1/2 cup unsweetened shredded coconut
1 tbsp coconut oil
1 tbsp cacao nibs
2 tbsp natural peanut butter
2-3 tbsp cocoa powder (I added 3, because I can never have too much cocoa)
1 tsp pure vanilla extract
pinch of seal salt
1-2 tbsp water, to smooth things out
Once the mixture is nice and smooth, just use your hands, and roll into little balls. I store them in the fridge on wax paper so they don`t stick together. They can keep for a few weeks in the fridge, but if you`re like me, they won`t last that long!
